Lebanese cuisine includes an abundance of whole grains, fruits, vegetables, starches, fresh fish and seafood. Instead of cooking with fatty butter or cream, vegetable oil is used and olive oil is used generously in salad. While olive oil is still high in fat content, it is full of mono-unsaturated fatty acids which can lower cholesterol and improve heart health. Olive oil can also help control blood clotting and blood sugar levels.

Lebanese food is extremely tasty and appreciated by the palette because of the variety of spices and fresh herbs they are included in so many of the recipes.  for example, parsley used in the traditional dish, Tabouli, aids digestion and provides a crisp, green flavor.  Parsley is also high in antioxidants and an incredible amount of vitamin K which plays a key role in bone health and protects the brain from damage.

There are a few ingredients that are used in almost every Lebanese dish :lemon, olive oil, and garlic. Food is often sauteed in garlic,and olive oil is used to dress salads, where its delicate flavor really comes alive. Lemon is used extensively in authentic  Lebanese food specially salads. The Lebanese often cook with a nut-based oil, such as peanut oil. For more flavor and better results, but due to allergies we do not use this. opting instead for a non-GMO vegetable oil.

Small eggplants



1 cup vinegar


Liquid oil

Enough salt and pepper


Peel the eggplants. Divide each of them to 4 pieces.  sprinkle some salt on them and roll them in the oil. pour boiling water over the tomatoes and peel them and then crush them. Peel the onion and wash it. Stir two to three tablespoons of liquid oil into the pan and place the onion on a gentle heat. Add some salt and pepper. Peel the garlic, beat it and fry it with a little onion.  Remove half of the fried onions from the pan and add half of the tomatoes.  Put the eggplants on the tomatoes and sprinkle the rest of the onions on these tomatoes and sprinkle with vinegar and a little salt and pepper. Close the pan,place the pan on the oven at 350 degrees Fahrenheit for 30 to 45 minutes to cook all ingredients but do not crumble. It can also be cooked at a moderate heat.
